In a clean fermentation jar, mix high gluten flour and water to form a slurry. 2. Add natural yeast to the mixture, stir well. The starter is ready when its volume doubles within 4-8 hours after feeding. 3. Use date tracking and feeding marks on the jar to add equal amounts of flour and water to the sourdough starter daily to maintain its activity. Observation and Adjustment: * Use a thermometer band to monitor the temperature of the fermentation environment and ensure it stays within the appropriate range, typically between 70°F to 85°F. * Observe the fermentation of the sourdough starter, including bubble formation and volume expansion, and adjust feeding frequency and ratio as needed. - Step 2, Making Dough: When the sourdough starter is fully active and shows strong fermentation characteristics, use it to make the dough. In a large bowl, mix high gluten flour, water, salt, and active sourdough starter together to form a slightly sticky dough. Transfer the dough to a clean work surface and knead or fold to develop gluten until the dough becomes smooth, elastic, and not sticky. - Step 3, Dough Fermentation: 1. Place the kneaded dough back into the bowl, cover with a damp cloth or plastic wrap. 2. Put the bowl in a warm, draft-free place to ferment until the dough doubles in volume, which may take 1-2 hours or longer depending on the ambient temperature and dough activity. - Step 4, Shaping and Proofing: 1. Shaping: After the first fermentation of the dough is complete, remove it and deflate it on the work surface. Divide the dough into the desired size and shape it into round or oval shapes. Surface tension helps the bread maintain its shape. 2. Proofing: Place the shaped dough on a baking sheet or in a round or oval silicone proofing basket, cover with a damp cloth or plastic wrap, and let it proof again in a warm, draft-free place until the volume doubles again. - Step 5, Baking: 1. Preheat the oven or baking stone to the appropriate temperature, typically around 200°C/392℉. 2. Use a bread lame to score patterns on the top of the proofed dough to control expansion during baking.
